Shrimp Hoagies

This variation of shrimp scampi has been a staple in my family's household for years and enjoyed on many Sunday afternoons after church. (I wish I had pictures to share, but not only was the lighting in the kitchen completely off with the storm coming in, I was way too hungry.)

- 1 lb. shrimp
- 1 stick butter
- 2-3 tbsp. olive oil
- 1/4 cup heavy whipping cream
- 1/4 cup chicken broth
- 3-4 cloves garlic (fresh, preferably)
- 2 tbsp. lemon juice
- parsley
- dill
- Parmesan cheese
- mushroom (optional)
- hoagie rolls
- lettuce
- cucumbers and/or pickles
- mayo, Ranch dressing, etc.

1. In pan, heat butter, olive oil, minced garlic. Add shrimp and cook for 3-5 minutes. (You can also grill the shrimp-amazing alternative).
2. Add cream, chicken broth, lemon juice, parsley and dill to taste. Stir.
3. Grate Parmesan cheese; add a bit to sauce. I like to leave some aside to top my hoagie also.
4. Assemble the hoagie with whatever sandwich toppings you'd like. I had Swiss cheese, mayo, lettuce and cucumbers on mine today. This a sandwich with so much flavor from the shrimp that a couple of toppings are all it needs. *Another option is to assemble everything in a soft tortilla shell.
5. Serve with chips, salad, fruit, etc.

This is a light, refreshing lunch or dinner but is plenty filling. It easily feeds 4, but even it's just one or two of you, I recommend making the whole recipe for 4 (as I usually do). I was able to make a hoagie for myself and use the rest for actual shrimp scampi over penne pasta for dinner.

Get Over It

Been having one of those days weeks. Broke down a little bit on the phone today with my dad who told me to find a cool place ('cause it's 90 degrees here. Go figure.) and take a nap with Duke. Well, Duke's teething and wanted no part of sharing the couch so I've been wandering around the internet until I can fall asleep. And I came across this.

Lovin' the Lake

This weekend pretty much marks the beginning of the madness at the lake resort the boyfriend and I both work. While things can get hectic and make you question a little bit of everything some days, working at a lake certainly has its perks and truly can't be beat. So we'll try to keep things like this in mind.

Monday Motivation

Going for jogs and eating better has not only made me feel better lately, I've also lost some weight. About half of what I'd like to, but it's been so enjoyable and rewarding, I feel silly for not doing it sooner. Much sooner.
I'm beginning to feel more comfortable, in my clothes (and I don't always mean literally, as some days my pants are a bit big!), as well as in my own skin. Which leads to more confidence, which leads to a better, much nicer me. :)
Whatever your goal may be in striving to better yourself, keep going. Work as hard, if not harder than you ever have. And you will get there. But remember to do it for yourself before anyone else. Because...

Night Light

So in putting the upstairs together, I've decided to utilize this diy canvas night light project. I've been saving this project for a while until I knew exactly what I wanted the canvas to say. I've got some ideas and can't wait to see it's glow on the wall at night instead of a dinky night light in an outlet.

Last Resort

So today I had the day off. And in taking Duke out for a potty break, realized it was way too beautiful to stay in. So we went for a drive to the lake. My original plan was to go to the beach so Duke could swim. I wasn't sure they allowed dogs but thought it wouldn't hurt to try. The dang place was deserted and there was a creepy construction crew there (I also planned on laying out) so there went that option. Next, we tried a state park up the road which was nice, and I let Duke play in the water, but there were too many trees to let the sun shine through, not to mention the piles upon piles of ants. Duke did get to chase butterflies which was adorable until he caught one and it hobbled off with an injured wing. So as a last resort, we went to the resort (ahahaaaa). Of course, when we got there, the spot where I planned on taking Duke was being mowed. So we wandered around and he got to see geese (including 5 babies!) and seagulls (shouldn't they be going home soon?) and duckies. He wanted to chase all of them but managed to scare them all into the lake. Once lawncare was done, we headed back to the car to get our supplies for the afternoon- beach towel, tanning lotion, doggies treats, camera, and phone. We successfully made it down, I was able to tan for about 2 hours, we played in the water, he listened to the geese (his dad would be proud) and it was an amazingly relaxing day. We tried to go visit the boyfriend at the docks, but surprisingly, they were pretty busy. So we came home. And Duke's been sleeping since we got here. I'm debating whether I should take a shower or just stay in my swimsuit and see if the boyfriend wants to go outside when he gets home soon. We shall see! Here's a couple pictures I managed to snap today-it's kinda hard to do much of anything when holding a leash attached to a very curious, and busy puppy.

He found sooo many sticks. Even pulled some out of the lake.

There we go- nice smile for mama. (And yes- his teeth are missing. He's teething! And his new teeth are HUGE.)

And here's our garden so far! I really need to go out and get some lettuce soon! Yum!

Monday Motivation

Certain people are in our lives (temporarily) to test us. Our reactions to them shape our personalities as well as teach. I am constantly learning. What I have learned recently is to let God take care of a few things. He will make things right, better than we ever could. So don't even try. Simply keep doing what you're doing. Work hard, be a good person. Do not sink to their level. And do not seek revenge.
